Zucchini Pancakes

Our garden produced a bounty of Sprouts had a great sale on zucchini recently, so Phil was on the lookout for a fun and yummy recipe to use up our many many zucchini.

He made these pancakes, a cousin to potato pancakes, and they were so dang yummy!!!! Halfway through my second pancake, Phil turned to me and asked if I was going to blog about the pancakes. In all seriousness I answered yes and then realized that he was taunting me.

What do I need to do to get some respect from my loved ones? Just wait... when I have this blog turned in to an amazing Blurb book, we'll see who is laughing!!!


Zucchini Pancakes
from Disney's Family Cookbook
1 pound zucchini, grated (We used five small zucchini.)
1 bunch scallions, minced
1 egg, lightly beaten
1/2 cup all-purpose flour
1/3 cup grated Parmesan cheese
Ground pepper to taste
Vegetable oil for frying
With a fork, gently mix the zucchini, scallions, egg, flour, cheese, and pepper. Place a large skillet over med-high heat and add the oil, 1/4 inch deep.
Place a heaping forkful of the zucchini mixture into the pan and press into a circle about 1/3 inch thick. Cook until brown and crispy on both sides, pressing down with the back of your spatula several times to squeeze out excess moisture; repeat with the remaining batter.
**It is very important to not skip the "pressing down with the back of your spatula" step.

Cookie Dough Brownies


Aunt Amber's Cookie Dough Brownies
Make 1 9x13 pan of brownies. Cool completely.

Filling:
1 cup butter or margarine
3/4 cup brown sugar
3/4 cup sugar
1 tsp. vanilla
2 1/4 cups flour
1 tsp. baking soda
1/2 tsp. salt

Cream butter, sugars, and vanilla together. Add dry ingredients. Spread over cooled brownies and chill. If mixture is too thick, add 1 - 2 TBS milk.

Topping:
1 cup chocolate chips
1 TBS shortening

Melt chocolate chips on stove or in microwave. Stir in shortening until smooth. Spread over cookie dough and chill. Cut and enjoy!

These are super yummy brownies! My sister-in-law made them for a family activity years ago and they immediately became one of our favorite treats! I made them tonight for Kendall to take to her teacher tomorrow for his birthday.

Berry Smoothie Recipe - LOW CARB!!

I've discovered a recipe for a very yummy snack or even a breakfast! Easy and oh, so delicious! It has 6g carbs!


1 C Vanilla Soy Milk
1 C ice
1 C raspberries
1 TBS Splenda


Blend until smooth. Serves one!


Note: I have used blueberries too. Very very yummy! Also, I use just a bit less than a full cup of the soy milk. I like it just a little thicker.
