Zucchini Pancakes

Our garden produced a bounty of Sprouts had a great sale on zucchini recently, so Phil was on the lookout for a fun and yummy recipe to use up our many many zucchini.

He made these pancakes, a cousin to potato pancakes, and they were so dang yummy!!!! Halfway through my second pancake, Phil turned to me and asked if I was going to blog about the pancakes. In all seriousness I answered yes and then realized that he was taunting me.

What do I need to do to get some respect from my loved ones? Just wait... when I have this blog turned in to an amazing Blurb book, we'll see who is laughing!!!


Zucchini Pancakes
from Disney's Family Cookbook
1 pound zucchini, grated (We used five small zucchini.)
1 bunch scallions, minced
1 egg, lightly beaten
1/2 cup all-purpose flour
1/3 cup grated Parmesan cheese
Ground pepper to taste
Vegetable oil for frying
With a fork, gently mix the zucchini, scallions, egg, flour, cheese, and pepper. Place a large skillet over med-high heat and add the oil, 1/4 inch deep.
Place a heaping forkful of the zucchini mixture into the pan and press into a circle about 1/3 inch thick. Cook until brown and crispy on both sides, pressing down with the back of your spatula several times to squeeze out excess moisture; repeat with the remaining batter.
**It is very important to not skip the "pressing down with the back of your spatula" step.
